My tween daughter and I am in Hilton Head, South Carolina this week with family friends. The weather has been amazing and the company so fun. My friend invited me and then asked if I would be interested in cooking. The deal: I would cook and she would buy the food. This sounded like an excellent idea to both of us!
I started to plan out a menu for the week including a few items for lunches and snacks. Here is a look at what we have been eating this week.
Next night, Hari Krishna Chicken, grilled zucchini and onion salad, and coconut rice. To make this simple dish, cook brown rice in chicken broth. Toast about 1 tablespoon of sweetened coconut for every cup of rice and mix in the hot, cooked rice.
Before our vegetarian guest arrived, we had one more carnivore meal with Taco Cupcakes. I served this with fresh pineapple. Taco cupcakes were a big hit! They also made a great lunch option after our 16 mile bike ride around the island. Only in a place that is almost completely flat could I make it 16 miles!
Out to dinner one night at a local place called David’s Roastfish and Cornbread. How about sweet potato cornbread or vegetable p0-boy? I had grilled shrimp but others in our party had mahi-mahi and flounder and catfish. Hot, succulent hush puppies for all.
What a great time we have had! For the past three weeks I have been out and about but it is time to head home. I hope you are all enjoying your summer!
